FFC - Funkyffi's Fried Chicken

Fried chicken is the best, even the Colonel agrees.

But sometimes, when you need some comfort food and don't want to leave the house or can't find the phone then making it is not a hassle.

This easy fried chicken recipe doesn't require brining or marinating so can be ready in a flash.

Ingredients

- 1 whole medium chicken

- 130g flour

- 1 tbsp salt

- 1/2 tsp black pepper

- 2 eggs

- 300-400ml vegetable oil

- 1-2 tsp chilli powder

- 1-2 tsp paprika


Notes

If you can't be bothered/don't know how to joint a chicken then thigh, leg, breast or whatever you have handy will do - just make sure you have 8 pieces minimum!

Preparation

  1. Joint the chicken with a sharp knife.
  2. In a mixing bowl, add in flour, seasoning, chilli powder and paprika. Mix together.
  3. In another mixing bowl, beat two eggs.
  4. Fill your pan midway with oil and start heating - it will be ready when you throw flour in and it sizzles.

Method

  1. Use two hands for the dipping process, this saves you getting a gungy hand and you can still answer the phone without worrying about getting egg everywhere.
  2. Dredge chicken piece in flour, shaking off excess.
  3. Dip chicken piece into egg.
  4. Let the egg drip off, and then dredge again in flour.
  5. Set aside and repeat the process for all chicken pieces.
  6. Fry the chicken in the oil over medium heat. The process will take about 10-14 minutes for every 2 pieces of chicken. Turn over during frying so that they get an even crisp golden coating.
  7. Once both sides are cooked, remove and drain on kitchen towel until ready to serve.

Summary

There are many options when it comes to this recipe - you can chop the chicken up into nuggety snacks, and serve it with coleslaw, beans, gravy, whatever!

If you're having 2 pieces a head I'd also recommend a hearty portion of home cooked chips.

But then, that's highly recommended in all sorts of circumstances.
