Preparation
1) Wash the spring onions, trim them and then chop the white bits super fine, and the green bits much less fine. There are probably videos of how to do this on TikTok.
2) Remove the seeds from the red pepper, take your chosen half and cut into strips lengthways, before chopping the strips into little squares.
3) Clean then slice the mushrooms.
4) Top tip - if you do the veg first and put them on a plate or bowl you don't have to clean the chopping board before this bit. Chop the chicken into either 2cm chunks or little strips, depending how you feel.
5) Cut the bacon into strips. I always find the quickest way is with scissors, but you do you babes.
Cookery
1) Brnig a pan of water to the boil for the pasta
1) Melt some butter or oil in a frying pan along with some black pepper then cook the chicken bits until lightly coloured.
2) Add the bacon to the pan, and cook it lightly.
3) Add the white bits of the spring onion and the red pepper, and cook them for a minute or two as well.
4) Add the tin of tomatoes to the pan, squish it all up and bring it to a low simmer. Add some more black pepper.
5) Add the mushrooms to the pan and stir them around. Don't worry that they look raw right now. As it all breaks down they will cook and absorb all the tomatoey bacony goodness.
6) Add the pasta to the boiling water with some salt. It will take 10 minutes, so set your timer.
7) When the timer goes off tear the basil leaves and add them to the tomato sauce (or your dried basil), along with the green bits of the spring onion.
8) Drain the pasta (if it's cooked) then put it back in the saucepan you cooked it in.
9) Stir the pasta sauce into the pasta. Add a dash of olive oil if you love that slick grassy goodness like I do. Damn I'm dirty.
10) Serve in bowls. Top with cheese if you like such things. Eat. Celebrate the goodness.
Summary
As with most of these pasta dishes (and forgive me if I copy and paste this bit) if you are just cooking this for one, halve the amount of pasta you cook (You need 130g-150g per person, which is between a quarter and a third of a 500g bag).
You can save half of the pasta sauce for another time, and cook more pasta fresh when you need it. Pasta is not great re-heated.
