Fudgy chocolate pudding

You've all seen those cookery programmes where they have those chocolate puddings with the melty bit in the middle that doesn't always work well forget them. This definitely works..always.

Ingredients

- 4oz caster sugar

- 4oz margarine

- 2 eggs

- 3oz self-raising flour

- 4tbsp cocoa powder

- 1tbsp milk

- 3oz Demerara sugar

Method

  1. Preheat oven to 190C /375F/ Gas mark 5.
  2. Cream margarine and caster sugar together until soft.
  3. Gradually beat in the two eggs.
  4. Sift in flour and two tbsp of the cocoa powder and mix in.
  5. Spoon into buttered 2 1/2 pint ovenproof dish.
  6. Mix remaining cocoa powder and sugar with 1/2 pint boiling water.
  7. Pour cocoa powder mix over sponge mix.
  8. Bake for 35-40 minutes until sponge is cooked and sauce has soaked to the bottom of dish.

Top Tips

  1. You can do steps 1-3 in a food processor
  2. When you pour wet mix over cake it does look a bit bleurgh but believe me it's fine

Summary

Serve with custard,  ice cream and or just with a big spoon. Great to share if you really have to.
